Chicken Soup with Cabbage Noodles

This recipe is low carb and low histamine per serve, gluten free, dairy free optional.

Serves 8


•110 g butter, ghee or suitable dairy free option

•2 celery stalks sliced

•2 minced garlic cloves

•3 tbsp minced shallot

•2 tsp  parsley *

•1 tsp salt

•¼ tsp ground black pepper*#

•2 litres home made chicken stock /broth (made with just chicken carcass)

•1 medium sized carrot *#

•1½ cups shredded cooked chicken (freshly cooked for low histamine)

•2 cups of green cabbage sliced into noodle sized  strips


  1. Melt the butter, ghee or DF alternative,  in a large pot.
  2. Add dried shallot, celery,  and garlic into the pot and cook for three to four minutes.
  3. Add stock, carrot, parsley, salt, and pepper. Simmer until vegetables are tender.
  4. Add cooked chicken and cabbage. Simmer for an additional 8 to 12 minutes until the cabbage “noodles” are tender.


This recipe per serve (1/8) is also low in salicylate # and oxalates *, despite containing some ingredients that are moderate to higher in these.
